One of my favorite treats to make around the holidays is Rolo Pretzel Bites. They are just about the easiest things EVER to make--seriously 4 minutes, people!!! I love to experiment with the same basic recipe, and I've tried quite a few different variations. I first made them using Mint M&M's during the Christmas holiday, and I fell in {love} with them. I knew then that they would be perfect for St. Patrick's Day! Mint Pretzel Bites are my new favorite treat.
The combination of sweet and salty is irresistible, and the chewy caramel with the crunch of the mint M&Ms is perfection. You might want to make these when you're going to give some away, otherwise you will want to eat the whole batch. You've been warned.
I also really like all the different colors of green--it makes for a pretty presentation! Wrap these up in a clear treat bag, tie with cute ribbon or baker's twine along with a fun tag, and you've got the perfect treat to drop on a neighbor or friend's porch or hang on their doorknob. Having people over for dinner, or for a game night? Put these out in a bowl and watch them disappear!
My kids LOVE helping to make these, and they are always in charge of unwrapping the Rolo candies. The perks? I don't have to unwrap, and they get to sample the candy--match made in heaven!
- Rolo Chewy Caramels
- Small Pretzels
- Mint M&M's
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or foil. Lay out your pretzels on the foil/parchment, evenly spaced. Top each pretzel with an unwrapped Rolo. Bake for 3 minutes, or until Rolos are starting to soften. Remove from oven, and immediately push an Mint M&M into the center of each Rolo. Refrigerate until firm.

Hi Kierste are the pretzels you use small rings? I find it very difficult to locat mini circle pretzels which are perfect for this treat. If they are would you care to share the brand so that I can begin the hunt for them?

They aren’t a perfect ring, with nothing in the middle–the are like a miniature soft pretzel shape, like the ones you buy at the mall to eat, lol. They have the criss-cross loop in the middle, which actually what you need, so you have something to set the Rolos on. I hope that makes sense!
The small square (crisscross) pretzels work really well too.
I love these too, I use kisses in place of the Rolos sometimes, the mint sounds delish!
I make these all the time with Hershey kisses, but I love the idea of using Rolo’s!
