{o henry bars}

I love this yummy spin on Rice Krispie treats!  O Henry Bars are a family favorite, and they incorporate a delightful mix of peanut butter, chocolate, and a hint of butterscotch. I have a little boy named Henry, and he is especially excited that there is a treat named after him.  :)

I love bars--they wrap up so easily and are perfect for school lunches, picnics, trips to the park, and BBQ's.  They're popular with kids and adults alike, so you know they're sure to please! 

Rice Krispies are combined with peanut butter and a few other ingredients to create a delicious base for the chocolate & butterscotch topping.  If you've never had butterscotch and chocolate together, it's definitely worth a try.  The rich, mellow butterscotch flavor melds so nicely with the chocolate, and is the perfect match for the yummy bars on the bottom!

  • 1 c. Karo Syrup (corn syrup)
  • 1 c. sugar
  • 2 c. chunky peanut butter (you can use creamy, too)
  • 1 tsp. vanilla
  • 5 c. Rice Krispies
  • 6 oz. chocolate chips
  • 6 oz. butterscotch chips
  1. Bring the corn syrup and sugar to a boil in a large saucepan. Remove it from the stove, and add the peanut butter and vanilla. Once it's well mixed, stir in the cereal. Spread in a greased (with butter) 9x13 baking dish. Melt the butterscotch and chocolate chips in a glass bowl in the microwave. Start with a minute, stir, then cook in 15 second intervals if needed until melted and you can stir it smooth. Pour on top of Rice Krispie mixture. Let sit until the chocolate has hardened, then cut into bars.

  2. I can attest to the yumminess of these bars. I have been making them for years. We call them Baby Ruth Bars but the recipe is the same.
