My kids have amazing noses. They claim that when they come home from school, they can tell before they even open the door if I’ve made them cookies or some other kind of treat…and they’re always right! Today I made them these Easy Cake Mix Cookie Bars, and they were a HUGE hit, as always. And guess what? They are THE easiest and fastest recipe for cookie bars you will find!
You guys. You can mix these up in less than five minutes. Seriously–I timed it! With just a few ingredients and about twenty minutes, you can have yummy cookies bars right out of the oven.
I like mine thick, so I use a 9×9 baking dish, but if you want them thinner, then just use a 9×13 baking dish instead. There are also SO SO many possibilities! I used a yellow cake mix with chocolate chips this time, but I’ve made a bunch of others, and they’re all so good. Pretty much anything you can think of works!
-Chocolate cake mix, chocolate chips (add nuts or marshmallows too!)
-Chocolate cake mix, white chocolate chips
-Chocolate cake mix, mint chips
-Chocolate cake mix, peanut butter chips
-Strawberry cake mix, white chocolate chips
-Lemon Cake mix, white chocolate chips
-Yellow Cake Mix, butterscotch chips
-Spice cake, white chocolate chips
They’re perfect for after school snacks, picnics, BBQs, parties, school lunches…and pretty much anything. You just can’t beat super easy AND summer yummy!
- 1 yellow cake mix (or other flavor)
- 1 egg
- ¾ c. butter, melted
- ¼ c. sugar
- Chocolate chips (any type of chips!)
- Mix the first four ingredients together, then stir in the chocolate chips. Spray a 9x9 baking dish (for thicker bars) or a 9x13 baking dish (for thinner bars) with cooking spray, then spread the cookie mix in the dish. Bake at 350 for 15 minutes (9x9) or 10 minutes (9x13), or until lightly browned. We love them served warm with ice cream too!
