My very favorite Christmas flavor combination is peppermint and chocolate. It just evokes the feeling of the holidays, and I love yummy recipes using the two together. My family also loves Kellogg’s® Rice Krispies® Treats, so one day this week, my three year old and I made the yummiest Christmas treat ever…Chocolate Peppermint Rice Krispies® Pops.
Yes, they are as good as they look! Even better, you don’t need a lot of ingredients to whip these up, plus they’re quick and easy. The holidays can be so busy, it’s nice to have a recipe that can come together quickly, but will wow your guests and the people you give them to. I put my pops on red striped straws, which makes them easier to eat, and adds that extra dose of holiday charm.
These are also so fun to make with little helpers! My cute three year old absolutely loves being in the kitchen with me, and when all the big kids are in school, it’s one of our favorite things to do together. She got to do the chocolate dipping and the peppermint sprinkling, and loved pressing the Rice Krispies® Treats in the pan for me!
Here’s a peek into my kitchen to see just how easy it is to put them together…
Chocolate Peppermint Rice Krispies® Pops
-6 c.Kellogg’s® Rice Krispies®
-4 c. mini marshmallows
-3 T. butter
-5 T. crushed peppermint candies or candy canes
-lollipop sticks or paper straws
-1-12 oz. package chocolate chips
-crushed peppermint candies or candy canes for dipping
Melt the butter and marshmallows in a large pan, and stir until smooth. Stir in the 5 T. crushed peppermint (you can add more or less, according to your own tastes), then add the Rice Krispies® and mix well. Press into a buttered 9×9 pan. Normally this recipe would go in a larger pan, but you’ll need the thickness in order to hold a straw or popsicle stick once they’re cut into rectangles.
Cut the Kellogg’s® Rice Krispies® Treats into rectangles, then poke a striped straw (or popsicle stick) into the bottom of each one.
Melt the chocolate chips in a microwave-safe glass or ceramic bowl for 60 seconds, then stir and repeat in 15 second intervals until you can stir it smooth. Crush some more peppermint candies or candy canes and place them in another bowl.
Have a little helper dip the Kellogg’s® Rice Krispies® Treats rectangles into the melted chocolate…
and then sprinkle them with crushed peppermint. (Don’t you love the chocolate evidence on her face? Helping in the kitchen has perks!)
Now you’re ready to enjoy and serve! Take them to a party, wrap them up individually in cellophane for easy gift-giving, or set them out at your home for friends and family to enjoy. Our family does a Christmas Countdown each year, and this is a really fun recipe to add to our list!
