Toasted Coconut Hot Chocolate

We are a hot chocolate family. We drink it on a pretty regular basis through the winter, and at least once a week, my kids come bursting through the door from school asking me if I made it for them. While we do use hot chocolate mix sometimes, and definitely for single-serving convenience, I make homemade hot chocolate the majority of the time.  It just takes a few minutes, and it is so worth it!  It's also fun to experiment with different flavors, and this week I tried a Toasted Coconut flavor that is TO-DIE-FOR good.

Whether you live where it's cold or hot, fall arrives and soups and stews become irresistible.  One of our favorites this fall is Hearty Oven Beef Stew, and it's seriously the best beef stew I've ever had.  It's thick with chunks of meat and vegetables, with a rich, delicious flavor. Homemade Hot Chocolate with Peppermint Cream

Our weather is finally starting to cool off, and I am in HEAVEN.  I've missed the crisp mornings and evenings so much since moving from Michigan, and so since the temps have gone lower, I am so happy. It also means that I start baking like crazy (why is it that the weather does that to me??), and thinking about some of our winter favorites. One of those that top the list is Homemade Hot Chocolate. I grew up with hot chocolate being homemade--I don't think I even knew what a packet of it was (what, you just add water??) until I was in high school or later.  I do use the packets sometimes now for convenience, but nothing beats the homemade version.
