Roasted Garlic Potatoes with Red Peppers & Onion
- Scrub your potatoes, pat dry, then cut into cubes. Lay them out on a cookie sheet, covered in aluminum foil.
- Cut the red pepper and onion into pieces–slightly bigger than bite-size. Add them to the potatoes on the cookie sheet.
- Toss the vegetable mixture with olive oil, coating well. Add chopped garlic, salt, pepper, and garlic powder to taste.
