Cowboy Caviar Salsa

Cowboy Caviar Salsa is a delightful and fresh dip full of tomatoes, black beans, corn, and avocado with a light dressing to pull it all together. Serve with tortilla chips, and prepare yourself to eat the whole bowl!

One of my favorite appetizers and salsa recipes of all time, Cowboy Caviar Salsa takes just minutes to make and creates a lot of happy people! It’s perfect for BBQs, parties, gatherings, potlucks, and picnics. It’s always a hit, and eaten up quickly.

Cowboy Caviar Salsa

Tomatoes, cilantro, avocado, and black beans, with a hint of lime…it’s so light and fresh, but filling at the same time. I serve it with tortilla chips, and if I’m not careful, I can eat the entire bowl! It’s one of my favorite summer snacks, because of all the fresh vegetables, but you can definitely make it all year long.

My kids really love it too, and the day I took these pictures I made it for an after school snack by request, and it was gone in no time. So many yummy things all in one bite! It’s even fun to tuck in a school lunch.

Easy appetizer recipe!

It really is a quick and easy recipe, which I also love. In about 15 minutes it’s ready to go, and can also be refrigerated until ready to serve (or leftovers, if you have any). If I don’t have fresh corn, I’ll use frozen corn, which also works really well. All it takes is chopping a few veggies, and tossing in a quick dressing. That’s the best combination…fast, easy, and yummy!

Ingredients
 

  • 2 15 oz. cans black beans, rinsed and drained
  • 1 10 oz. bag frozen corn, or 2 c. fresh corn
  • 2 large tomatoes, chopped
  • 2 avocado, chopped
  • 1 purple onion, chopped
  • 1/4 cup cilantro, chopped
  • 3-4 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar (or white wine vinegar)
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  • Combine all the ingredients in a large bowl, cover and chill. Serve with tortilla chips.
