Caramel Marshmallow Popcorn

Popcorn is a huge favorite at our house, and in addition to being a popular snack, it often accompanies our family movie nights.  Now that summer break is here, we love to snuggle up after bath time, make a big batch of popcorn, and watch some of our favorite movies.  Often it’s a big bowl of buttered popcorn, but my kids also love caramel popcorn, marshmallow popcorn, and a fun twist with the two of them together…Caramel Marshmallow Popcorn!

Not only is it super yummy, but it’s SO easy (just three ingredients), and I can whip up a batch in less than ten minutes.  Fill a bowl, or make them into popcorn balls–either way, it’s totally and completely addicting. You know that potato chip commercial about not being able to eat just one—I dare you to eat just one piece of this popcorn and then stop!

1 c. butter
2 c. brown sugar
4 T. corn syrup
1 tsp. vanilla
1-10 oz. bag mini marshmallows
16-20 c. popped popcorn
Melt the butter in a large saucepan over medium heat, then add the brown sugar, corn syrup, and vanilla. Pour in the marshmallows, and stir constantly until they’re completely melted and the mixture is smooth.
Pour over the popcorn and stir with a wooden spoon until all of it is covered with the caramel marshmallow mixture. If you want it more gooey, start with a little less popcorn–you can always add another cup or two to get it where you like it.
*You can also use microwave popcorn–two bags!
*This recipe can be halved.
