Double Peanut Butter Rice Krispie Treats

Rice Krispie treats are pretty much beloved at our house.  They are requested quite often, and I like to do something a little different from time to time.  One of our favorites is Double Peanut Butter Rice Krispie Treats, and it just takes once to fall in love with them! The creaminess of the peanut butter combined with the chewiness of the Rice Krispie treat is a match made in heaven!

You all know how easy and quick Rice Krispie treats are, and adding these few ingredients doesn’t add much time at all to the process. This recipe makes the perfect Rice Krispie treat, in my oh, so humble opinion!  I don’t like them to be hard and crunchy–I love chewy ones the best, so I always alter the main ingredients to make them that way.  They have both peanut butter and peanut butter chips in them, which doubles the nutty flavor.  SO good!!!

If your kids can take items with peanut butter in them to school, these are great for school lunches!  I love to wrap them up when I’m taking a picnic lunch somewhere, and they’re perfect for an after school snack!

Ingredients
 

  • 2-10 oz. packages of mini marshmallows
  • 7-8 c. Rice Krispies
  • 6 T. butter
  • 1/2 c. peanut butter
  • 12 oz. bag peanut butter chips

Instructions

  • Melt the butter in a large pot over medium heat. Add the marshmallows, and stir often until they're melted. Take off the heat, and stir in the peanut butter. Mix well. Add the Rice Krispies 2 or 3 cups at a time. If you want them to be more on the chewy side, add 7 cups. If you want them just a little more firm, add 8 total cups! Pour in the bag of peanut butter chips, and fold them into your Rice Krispie mixture. Some of them will melt, but you want some to stay whole.
  • Spread into a 9x13 baking dish that's been greased with butter. Don't use cooking spray--it will give your Rice Krispie treats a funny taste. Let them sit for an hour or so, then cut into squares! Enjoy!
