Easy No-Bake Granola Bites

Our family LOVES these homemade granola bites, and they are a constant in our home.  They may also the easiest recipe you’ll ever make! Just three ingredients (plus any mix-ins you like), and you’ve got a yummy no-bake after school snack, quick breakfast, or addition to a school lunch.

No-Bake Granola Bites Recipe

You seriously cannot beat how quick and easy these homemade granola bars are. Peanut butter, honey, and oats…that’s it! You can easily make these gluten-free by using gluten-free oats. You can also add in mix-ins you like–coconut, nuts, chocolate chips, peanut butter chips, sunflower seeds–the sky is the limit.  I love being able to use the same basic recipe, but change it up if I want to.

They’re no-bake, so there’s no oven time! You can keep them refrigerated if you like, but they’re also really yummy at room temperature–they’ll just be a little softer.

If you have a child that wants to be more hands-on or independent in the kitchen, this is a really great recipe for them to try. It’s easy from start to finish, with no oven or stove, and they can really do everything!

Granola Bites Recipe

Ingredients

  • Oats (quick or rolled)
  • Peanut butter
  • Honey
  • Chocolate chips
  • Additional mix-ins if desired: coconut, peanut butter chips, raisins, etc.

Instructions

Measure the honey and peanut butter into a large microwaveable bowl.  

Melt the honey and peanut butter together in the microwave for about 30-45 seconds.

Gradually add the oats, a cup at a time, stirring until completely combined.

Stir in any mix-ins. Try adding your favorites–like coconut, raisins, nuts–or leave them plain if preferred.

Roll into desired size balls. I make mine on the small to medium side. Makes 24-32 balls, depending on how big you make them. You can keep these at room temperature, but my kids prefer them kept in the refrigerator. They don’t last long though!

OPTION: You can also cut these into bars if you prefer. Press mixture into a 9×13 baking dish, refrigerate for about 30 minutes, then cut into bars.

Are these granola bites gluten-free?

All of the ingredients listed are naturally gluten-free. Check labels for processing and manufacturing information on the peanut butter and oats. You can use specifically gluten-free oats if desired.

How do I store them?

Keep the granola bites in an airtight container for up to 5 days. You can store them at room temperature, or in the refrigerator.

Storage and Freezing

You can freeze granola bites for up to 3 months. After rolling them into balls, lay them out on a cookie sheet, cover in plastic wrap, and freeze in a single layer just until frozen. Remove and place in an gallon freezer bag, making sure to remove all the air. If they’re already cold from being in the refrigerator, and firm to the touch, you can try skipping the cookie sheet step and place them directly in the freezer bag.
